How humankind ever discovered the transmutation of milk into cheese is a miracle I'll never fully understand. To me, the discovery of cheese rests right up there with fire and the electric tricycle. I am very thankful for that unknown ancestor, and I offer my cheese-tasting goods as a humble salute.
