Flavor Roundup

Taco Flavor Wheel

The flavor wheel in 33 Tacos can be used to quickly recall a taco's unique characteristics long after consumption. Evaluate the tortilla, salsa and filling by marking dots along the wheel's labeled spokes. For low values of a flavor, mark near the wheel's center. A very spicy salsa might merit a “5,” while a milder salsa, a “2.” Connect the dots when finished. An Al Pastor taco with pineapple-habañero salsa is used in the example at right.

Taco Translator

The inside front cover of 33 Tacos contains a handy table providing translations for some rarer taco terminology, from Sesos (braised cow or pig brain) to Surtido (Mix of assorted pig parts), and just about everything a taquero could fit between two halves of a tortilla.

Secret Ingredient

A teeny, tiny amount of real lime juice is infused in the ink used on the cover.

33 Tacos is made with 100% recycled papers sourced in North America. The books are printed with care and infused with a little bit of fresh lime juice in sunny Portland, Oregon.
