If you enjoy exploring the wide world of cheese, Flight Decks are for you. Use them to chart your cheese-tasting experiences, labeling each cheese and noting specs like the milk, rind, and creamery before you embark. Just place your three wedges in front of the card on small plates or wax paper squares, or use the accessory Flight Board to situate your Stilton (or Brie or Camembert, or ... you get the idea). As you taste, you'll have the specs at arm's length while you sample each expression.

Flight Decks are a great way to organize tasting events for professionals and novices alike, and last as scrapbook-worthy souvenirs. There are 20 cards in each deck, enough for 60 morsels of Manchego (or Mozzarella, or Muenster, or ...). Cards measure 10½ x 4 inches (25 x 10 cm) and are printed on an extremely heavy and absorbent, FSC-certified coaster stock.
Choose Your Own Adventure
Flight Decks let you create your own tasting themes. Compare different regions, production techniques, aging conditions, ingredients or any other comparison you can dream up: the sky’s the limit. Here are a few I've enjoyed recently:
Tour de France: Three cheeses, three regions, no Jersey needed. Pun intended.
- Gouda Vertical: The same delightful cheese with different aging: 6, 12 and 18 months.
- Spot the Impostor: There's no substitute for the real thing when it comes to cheese ... or is there? Turn the card around and blind sample real Camembert from France vs. two American impostors and see if you can ID the PDO.
- Stinkfest! Three washed-rind cheeses. Clothespins optional.
Flight Decks work great on any solid surface, but for a truly elevated experience, add a Flight Board to your order. Flight Boards enhance both portability and presentation, and are handmade by yours truly from orchard-salvage Oregon Black Walnut. Boards measure 12" x 5" x ⅝" (30.5 x 12.7 x 1.5 cm) and have a handy slot to display your Flight Deck.
