How Sour is Sour?

Unlike common beer stats like ABV and IBUs, most brewers don't publicize their beers' acidity. As a companion to this book, I'm debuting an analog acid test that you can use to test beers in the wild, and note their pH, aka "potential of hydrogen." It's a way to put a number to a liquid's acidity, or lack thereof. Water measures 7.0, and anything below that is considered acidic. Most beers are in the 4.5-5 range, but some sour beers can get down into the 3's or even 2's. Want to test your beers as you log them? Add a Pocket pH Test Kit to your three-pack!

The flavor wheel in 33 Beers: Super Sour Special Edition can be used to quickly recall a beer’s unique flavor long after consumption. For low values of the flavor, fill in dots near the wheel’s center. I've updated this wheel to include some of the flavors you might encounter in the sour beers you sample. A Belgian Oude Gueze is used in the example shown.

Super-Shiny Secret Ingredient

Beer has often been described as liquid sunshine, but sour beers taste ... sparkly. The cover of this book features two metallic inks and at least two different shiny metallic foil stamps. It's a sparkle party ... for your mouth! A teeny, tiny amount of real sour beer is infused into the ink, which is cryptically noted on the back.
